There were some minor changes to the shipping classes in WooCommerce 2.6. Version 3.0 (really 2.7) actually brought very few user-facing changes. Most of the changes were under the hood enhancements for theme developers.
Our WooCommerce course partner has been working on updating the series nonetheless. But the course is still accurate in nearly every way.
