Hi Matthew,
Normally, I would recommend using a basic theme like a StudioPress theme, then simply add the Genesis Portfolio Pro plugin.
But, you’ve already got a theme for your site. So, in your case, the best course of action is going to be to reach out to the creator of the theme for support:

Ask them why you’re experiencing issues with images appearing at different sizes and such.
If you don’t get the kind of support you need, you can still reach out to the experts at Codeable and get help: https://wp101.com/help/
Of course, you could always choose a different theme, but that can be challenging if you’ve already spent a great deal of time setting up the one you have.
Still, I think in the long-term, you’ll be much better served by a proper theme created by a company like Studiopress, rather than one from the thousands of individuals who sell themes on Themeforest/Envato Market, but offer sketchy support.
Hope this helps!
