The right-hand side of my screen disappears as I'm writing in Gutenberg. Can't reset it and have to start again. Very frustrating!

Hey Adrian,
I answered with the following when you emailed me about this. It does sound very frustrating. Unfortunately, it sounds like once again, your theme is the culprit.
It appears your theme does not have proper support for Gutenberg, which is why your content is appearing to be cut off when you’re editing in the Gutenberg block editor.
It’s likely all your content is actually there, it's just being obscured because your theme doesn’t support Gutenberg properly.
Your best bet is to reach out to the creators of your theme and report this issue. Hopefully, they’re aware of the issue and have already created a fix.

Thank you, Shawn. The content is there (I can see it in Preview but it’s very difficult to edit half a screen)! The creators claim it’s not their fault, so I’m wondering if any other Gutenberg users have experienced this?
